Baked/Roasted chicken is easy. Chicken in a 350 degree oven till done to 165 degrees. As to herbs and spices? Make a mix of salt, pepper and dried rubbed sage. Spray the chicken with cooking spray and rub the spice mix all over the chicken. Then take some fresh sage leaves and push them under the skin of the breast. It looks good when cooked and gives a different flavor than many are used to.

Pan seared and baked chicken. Use boneless skinless chicken breasts. Preheat oven to 425, Heat 1/4 cup oil in a large cast iron skillet to hot. Put herbs on chicken and sear it in the skillet, 2 to 3 minutes per side. Place a small pat of butter on each piece and put the skillet in the oven for 17 to 22 minutes depending on thickness of chicken.

Hi. I don’t know the specific name of this recipe, so I’ll just call it oven roasted chicken. So, first, I mix butter, rosemary, black pepper, lemon, then onion and garlic puree in a bowl. Afterwards, apply the mixture on the chicken, plus some white wine at the end. Preheat the oven to 350 degrees then bake for at about 75-80 mins. Bye!

Whether I'm roasting a chicken or cooking cornish hens on the rotisserie grill (that's the picture), I always brine the birds in 2 quarts water, 1/2 cup salt and 1/4 cup sugar. Don't even need to heat it - just let it sit for 5 minutes and stir until everything dissolves. Brine for 2-4 hours.

Then my absolute favorite herb/seasoning combination that I put both under and on the skin is the following. You can be very flexible with quantities... (sometimes I use orange zest instead of lemon)


4 teaspoons fresh thyme, minced
2 teaspoons fresh oregano, minced
2 teaspoons fresh rosemary, minced
2 teaspoons sage, minced
1 teaspoons freshly ground black pepper
Zest of 1 lemon (roughly 1.5 teaspoons)
2 cloves garlic, minced
2 tablespoons extra virgin olive oil
